Decadent Chocolate Cherry Cake

Made with Happy Kitchen Chocolate Cake Mix.


This is a gluten-free version of a cake that I loved growing up. It's easy to make and very rich.


Ingredients for the Cherry Chocolate Cake Mix

 1 box Happy Kitchen Chocolate Cake Mix
 2 eggs
 1 can (21 oz) cherry pie filling
 1 tsp almond extract (may use vanilla extract if you want)


Mix together by hand. Put into greased 9 x 13 inch pan. Do not mix too much. Batter will be thick. Bake 35 minutes at 350 degrees. Ice while warm.


Ingredients for the Frosting

 1 cup white sugar
 5 Tbsp butter or margarine
 1/3 cup milk or milk substitute
 6 oz chocolate chips 

Boil sugar, butter and milk 1 minute, stirring constantly. Add chocolate chips and stir until smooth. May put on cake right out of oven.
