Potato starch is widely used in gluten-free baking and can also be used as a thickener for sauces and gravies. It is made by rinsing the starch out of shredded potatoes and drying it. For baking, it is used more frequently than potato flour (powdered dried potatoes). If in doubt, check your recipe!

It is useful for making baked goods such as pastries. When used as a baking ingredient, it makes the texture of baked goods softer and stickier.
