Ingredients: Tapioca flour, sugar, clarified butter, milk, eggs, chocolate chips, salt, ascorbic acid (vitamin C), natural chocolate flavor.

Panderos Delights Cookies (8 oz Bag).  Many countries are far less wheat-oriented than the US. For example, people who live in tropical climates make all sorts of great food from tapioca, the starch from the cassava root (which is also called manioc).

These cookies are a case in point. Cookies like these are made all over the world in countries that have a strong cassava culture. In the Philippines they are known as Uraro, in Colombia as Panderos and in the Dominican Republic as Ojaldra. It wasn't necessary to take the gluten out of this recipe. It never had any!

For some, these cookies will be a reminder of home. For many, they're a new-found treat: delicious, low-fat, bite-sized cookies that melt in your mouth. Kids love them.
