Ener-G Xanthan Gum. Xanthan gum is a key ingredient in gluten free baking. It adds body, acts as a thickener, and helps prevent the food from developing a dry texture. In some recipes the name of this product is misspelled as "xanthum gum".

Ener-G Baking Soda (Sodium Free). Ener-G Calcium Carbonate works just like baking soda, but it's completely sodium free. On average the sodium in baking soda is about 150-250mg per serving, whereas Ener-G's baking soda substitute contains 0mg per serving.

Another advantage of calcium carbonate is that it has a mild flavor: your baked goods will taste better without the harsh metallic taste of ordinary baking soda. Great for those looking to cut salt from their diets without having to sacrifice on taste or texture.

For best results double the amount called for in recipes with Ener-G Calcium Carbonate.
