ValpiForm Couscous.  Couscous is a traditional North African pasta that is usually topped with thick stew of tomatoes and other vegetables. It's often accompanied by barbequed meats. The dish originated in Algeria, Libya and Tunisia and is now extaordinarilly popular in France. A vegetarian couscous recipe can be found at this link. Traditional couscous pasta is made from wheat, but this gluten-free substitute is made from cracked rice.
