P.A.N. Pre-Cooked White Corn Meal (Harina PAN).  Recently some celiacs have written passionately about Harina P.A.N. on their blogs. It is a specially-prepared corn meal that can be used to make tortillas, tamales, empanadas, gorditas, polenta, and many other Latin American favorites. (The basic dough recipe is on the package in English and Spanish).

P.A.N. has been a household favorite in Colombia and Venezuela for half a century, having replaced the ancient process of pounding corn by hand to make cornmeal. PAN is especially popular in Venezuela, where it is used to make cornbread buns called "arepas". Venezuelans enjoy these buns as a snack (often stuffed with cheese) or slice them for sandwiches.

"Harina" is the Spanish word for "flour". "Pan" means "bread". This type of cornmeal is sometimes called masa harina ("masa" means dough).

Ingredients: Precooked white corn meal, iron, niacin, thiamin, riboflavin, folic acid.
