Tambo Bamba

Tambobamba "Nuevo Latino Cuisine" is named after a small town in Peru. In ancient South America, the Incans sent highly-trained runners called "chasquis" to deliver messages and goods. To connect their empire, the Incans created 14,000 miles of paths and roads through the mountains from Ecuador to Chile. Chasquis would run hundreds of miles over these rugged routes, stopping at small inns called "tambos" which served as meeting and relay points. By handing off a message from runner to runner as a relay, chasquis could deliver an urgent message nearly a thousand miles in less than a week.

Tambo Bamba Caribbean Rice Pelau.  In East India the combination of rice with meat and vegetables is called pilau, in the US, it’s pilaf, and in the Caribbean, it’s known as rice pelau. Influenced by ingredients brought to Trinidad by East Indian immigrants, this delicious dish is made with chickpeas, turmeric, chili flakes, coconut milk, and currants.

For the best flavor and easiest preparation, rice pelau is traditionally prepared as a one-pan meal, cooked along with pieces of fresh fish, chicken or shrimp. Excellent when finished with a squeeze of lime juice and chopped cilantro.

Ingredients: Rice, currants, onion, chickpeas, dried bell pepper, carrots, vegetarian chicken soup base (hydrolyzed soy protein, natural flavor, autolyzed yeast extract, soybean oil, silicone dioxide [to prevent caking], and extract of turmeric), tomato, chili pepper, natural flavorings, coconut milk extract, garlic, spices. manufactured in a facility that uses peanuts and treenuts.

Tambo Bamba Jamaican Rice & Beans.  The hint of scotch bonnet chili in this popular Jamaican rice dish provides delicious contrast to the sweet coconut milk and creates a perfect balance of flavors. This version of rice and beans (or peas, as the locals call them) is a traditional Sunday dinner in Jamaica.

Excellent as a simple dinner, or gently toss sauteed shrimp or tofu into the prepared rice and beans for a more substantial meal. Also excellent as a side dish with grilled fish, chicken, or beef.

Tambobamba Cuban Black Beans & Rice.  5?bDish name of this classic Cuban dish is "Moros y Christianos" which translates to "Moors and Christians" and alludes to the long history of wars between the Moors (represented by the beans) and the Spaniards (the rice). It's an everyday dish in Cuba, and an everyday reminder of the Spanish influence on that country. This version is kept simple by adding onions, green pepper, and mild spices. Excellent with spicy sausage, grilled or roasted beef, fish, tofu, and poultry, and a superb burrito filler!
