Based in North Dakota, Minn-Dak produces specialty ingredients from crops grown by participating farmers. The company was formed in 1967 and is currently operates the largest buckwheat flour mill in North America.

Minn-Dak Growers Fancy Buckwheat Flour - 50 Lb Bag. With 6.76% protein (by weight) and several important vitamins and minerals, Minn-Dak Fancy Buckwheat Flour adds good nutrition and delicious flavor to gluten-free baking.

In spite of its name, buckwheat is not related to wheat. In fact, it is in the same plant family as rhubarb. In the early part of the growing season buckwheat has broad green leaves and small white flowers. The photo at the left shows a buckwheat plant that is almost ready for harvesting. The remains of the flowers can be seen along with the distinctive triangular seeds. The purplish hulls will be removed, yielding brown seeds that are milled into flour.
